What can you expect?
During the symposium, we will address questions that every chef should ask themselves: which fish, shellfish, and clams can we still serve with a clear conscience? Which ones should we avoid? And above all, why? Together with marine biologists from the Netherlands Institute for Sea Research, we will discuss the advantages of choosing fish species that are lower down the food chain. Why should these species feature more prominently on the menu than the large, long-lived predatory fish that we are used to serving? You will gain practical insights and solutions that can be applied directly in your kitchen.
Responsible choices for the future
The climate is changing, and this has consequences for the types of fish we serve. It is time to make more conscious choices. Fish species with a fast life cycle and a low position in the food chain are often a better option than the large, long-lived predatory fish. What's more, it offers you the opportunity to try something new in your dishes. The symposium will help you understand the choices you make and why.
